Gelatin production from skin of Psettodes erumei, Pleurotremata and fillet wastes of fish processing plants in Khouzestan Province, south Iran

The use of course and offal fish and fish wastes for gelatin production was investigated. The research was conducted in two stages. In the first stage, fillet wastes, shark, and flounder were examined for their gelatin yield, purity, color, odor and flavor. In the second stage, the effects of temperature in three levels, 70, 75, 80 degrees centigrade and pH in two levels (6.5 and 6) were evaluated on the gelatin yield content. The raw materials were prepared from fishery factories in Boushehr Province. The alkaline and acid methods resulted in the maximum amount of gelatin. For alkaline method, impurities of the flounder were removed under Sodium Hydroxide 4% and 25degrees centigrade in three weeks which gave 20.85% gelatin. In acid method under a pH 6.5 and 70 degrees centigrade, 21.57% gelatin was produced. The results show an increase of 1.76% in gelatin production compared to similar studies.
