Effect of light on the quality (colour and as a drink) of dehulled coffee (Coffea arabica L.) beans during storage

Dehulled coffee cv. Catuai Vermelho beans were stored in the dark or exposed to different wavelengths of visible light. Beans stored under white or blue light showed the greatest deterioration in bean colour and the quality of the drink. There was no difference in flavour among drinks made from beans stored in darkness or under green, yellow or red light.
