Polysaccharides in green coffee beans
The polysaccharide fraction in green coffee beans is shown to consist principally of three polymers: an arabinogalactan, a mannan and cellulose. The arabinogalactan has a beta 1-3 linked galactan main chain with frequent arabinose and galactose containing side chains, whereas the mannan resembles cellulose in that it has a linear beta 1-4 linked structure. The mannan has few side-chains, with only about 1 in 100 mannose residues having single galactose residues attached. Comparison of Arabica and Robusta beans indicates that polysaccharide contents and profiles are similar for both types. Of significance is the higher content, on average, 3 per cent, of arabinogalactan in the latter type
