The caffeine-potassium chlorogenate molecular complex
The crystal structure of the caffeine-potassium chlorogenate 1:1 molecular complex derived from green coffee beans is described, and the relationship of this structure to the mechanisms of polyphenol association and precipitation is discussed. (Hort. Abst. 57(5):3856. 1987)
