Carbohydrates of different components of ripe fruits in coffee

Reducing, non-reducing and total sugars and starch contents were determined in fruit wall (pulp), mucilage and seed of fully ripe fruits of Coffea arabica L. cv. `Kents', C. arabica L. cv. `S. 795', C. arabica L. cv. `S. 1934', C. canephora Pierre cv `S. 274' (robusta), and C. dewevrei var excelsa (tree coffee) plants. In all the five plant types, total sugar content (reducing + non-reducing) was significantly more (at 1) in mucilage than in fruit wall and seed. Starch content was significantly more (at 1) in seed than in fruit wall and mucilage in all the five plant types except `Kents'. Total carbohydrate (total sugars+starch) content was considerably more in the ripe fruits of arabica `S. 795' and `S. 1934' as compared to other plant types. In view of the nutritive value of carbohydrates, the possibilities of utilization of coffee pulp and pulp water (which contains mucilage) for animal nutrition need to be further explored
