Most of the herds in Mexico are a mixture of different breeds that are now called criollo. Goats are of great importance because of both milk and meat production. The natural fluid milk consumption in Mexico is limited by the small production and inefficient marketing system. About 75 percent of the milk is industrialized, the remaining 25 percent is consumed as fluid milk. The annual production (1980) in the different states is presented. A description of the most important industrial products in Mexico is given, with comments about them (different types of cheese, cream, butter and sweet products)
